Lombardy - upper Oltrepò in the
municipality of Montalto Pavese at 390 m a.s.l.
VINEYARD
The particle is the n. 91 of 0.52
hectares in the farm named Vecchievigne, planted with Pinot Noir 100% clone 521. The exposure is
south-west and the soils are calcareous-clayey in places stony with marl. The plants are trained
in Gujot with 3200 vines/hectare.
HARVEST/VINIFICATION
Manual starting from the
third week in August with soft pressing of the fresh grapes and subsequent fermentation in small
thermo-conditioned stainless steel tanks.
TRAINING/AGING
In late spring, the entire batch of
wine from the relative vineyard is bottled for the long fermentation. After at least 120 months
of maturation on its lees, it is degorged and aged for a further 6 months. Sold after at least 12
years.
BOTTLE/PACKAGING
Champenoise in horizontal box of
6 bottles.
Appearance: brilliant golden yellow color with particularly fine and rarefied perlage.
Bouquet: fruity with hints of hazelnut, exotic fruit and peanut butter with a mineral finish.
Palate: fresh at the first sip with a pan brioche aftertaste and with a fullness, sapidity and complexity worthy of the greatest blanc de noir.
Service/ Pairings: Serve at 6/8 °C. Sparkling wine with very long aging, it does not leave the maison for 7/8 years. To be combined with the great dishes of Mediterranean cuisine both based on fish and meat and aged cheeses, excellent with casëula.
