PRODUCTION AREA
Lombardy - higher Oltrepò hills
Commune of Montalto Pavese 390 m asl.

VINES
Plot no. 86, of which 3 hectares
100% Pinot Noir, planted, facing northwest. The soil is of calcareous clay on marl and sandstone.The plants are Guyot pruned at a density of 4500 vines per hectare.

HARVEST / VINIFICATION
Manual harvest from the third week of August with direct pressing of fresh grapes and temperature controlled fermentation in small stainless steel vats.

DRAWING / AGING
The following spring 10% of Riesling is added to the Pinot Noir, the cuvee thus obtained is bottled for the second fermentation. After 18 months of aging on its lees, it is disgorged and marketed.

BOTTLE / PACKAGING
Champenoise bottles, in horizontal boxes of 6.

TASTING
Visual description: pale straw yellow with green reflections, the perlage is fine and persistent.

Bouquet: delicate but intensely floral and fruity with hints of jasmine and broom.

Palate: an initial crisp impact, reminisces of white fruit with hints of pear and pineapple.

Serving Temperature: 4°/6 ° C

Food Pairing: owing to its superb fragrance, it is excellent as an aperitif, with crudité, seafood, and cold cuts.
