MONSALTUS VINEYARD
Plots n. 88, 89, 90, 0.85 of hectares is planted with 100% Riesling, clone Heinz 65 Mosel.Facing northeast, the soil is typically well drained limestone and chalk.The plants are grown with Guyot pruning with a density of 5200 vines per hectare.

HARVEST / VINIFICATION
The grapes are strictly harvested by hand from the end of September. They immediately undergo a crio-maceration of at least 10/12 hours, to allow the must to extract the typical haracteristics of over-ripe grapes and the onset of noble rot. The fermentation continues through the winter until late spring.

BOTTLING / AGING
Ready to be drunk after at least two years in temperature controlled stainless steel vats and after 12 months in the bottle, taking into account that it can be appreciated for more than 10 years.

TASTING
Visual description: intense golden yellow with light green hues.

Bouquet: intense and complex, on a jammy yellow structure which highlights reminisces of acacia honey, citrus fruit and lime tree flowers.

Palate: crisp but very warm and soft from the natural residual sugar.

Serving Temperature: 6°/8 ° C

Food Pairing: A wine of great tasting and olfactory complexity, structurally important dishes are preferred, for example foods based on traditional balsamic vinegar. With blue and or mature cheeses.
