PRODUCTION AREA
Lombardy - higher Oltrepò hills
Commune of Montalto Pavese 390 m asl.

VINEYARD
Plot no. 32 planted during the 60’s has 00:40 hectare of 100% Pinot Noir clone 667.The exposure is south-west and the soil is of limestone and clay with streaks of stony marl.The plants are grown with Guyot pruning with a densitiy of 3200 vines per hectare.

HARVEST / VINIFICATION
Manual from the third week of August, The grapes are then pressed and destemmed then macerated with their skins. After 4/6 days the free run wine is drained and put into small temperature controlled stainless steel tanks to complete the fermentation.

DRAWING / AGING
In late spring, the entire batch of this wine is bottled for a long fermentation.After at least 60 months of aging on its lees when its colour is perfect, it is disgorged and marketed.

BOTTLE / PACKAGING
Champenoise bottles, in horizontal boxes of 6.

TASTING
Visual description: ruby red with light orange reflections, fine and persistent.

Bouquet: hints of bright red berries, raspberries, blackberries, strawberries and red currants.

Palate: ripe enveloping red fruit, with a slightly tangy aftertaste. persistent and full.

Serving Temperature: 8°/10 ° C.

Food Pairing: to fully appreciate all the nuances of the Pinot Noir. It is well paired with red meats, wild game,mature cheeses, excellent with venison stew.
