Commune of Montalto Pavese 390 m asl.
Plot n. 169 1.42 hectares planted with 100% Pinot Noir clone 386. The exposure is north-west and the soils are calcareous clay on marl and sandstone. The plants are grown with Guyot pruning with a density of 4500 vines per hectare.
HARVEST / VINIFICATION
Manual harvest from the third week of August with an immediate pressing of the fresh grapes and a temperature controlled fermentation in small stainless steel vats.
DRAWING / AGING
The following spring different parts of the base wine is blended, the Cuveé obtained is bottled for the second fermentation. After at least 36 months of aging on its lees, it is disgorged
and subsequently marketed.
BOTTLE / PACKAGING
Champenoise bottles, in horizontal boxes of 6.
Visual description: pale straw yellow with golden reflections, the perlage is fine and persistent.
Bouquet: fresh with hints of hawthorn, elder, yellow and citrus fruits.
Palate: the first impact has a tangy-fresh taste with fruity and floral aromas. A final slightly mineral taste with a long persistence.
