Plot n. 33 1 hectare 100% Pinot Noir clone R4is implanted. The exposure is north and the soil is well drained calcareous clay. The plants are grown with Guyot pruning with a density of 4200 vines per hectare.
HARVEST / VINIFICATION
Manual harvest from the third week of August with de-stemming followed by a temperature controlled cold maceration for 8/10 hours. The clarification of the must takes place naturally, gether with a temperature controlled fermentation in small stainless steel vats.
DRAWING / AGING
The following spring different parts of the base wine are blended, thus the Cuveé obtained it is then bottled for the second fermentation. After at least 24 months of aging on its lees,
when it is most fragrant and reveals its natural colour It will be disgorged and marketed.
BOTTLE / PACKAGING
Champenoise bottles, in horizontal boxes of 6.
Visual description: intense salmon pink, with ruby hues.
Bouquet: delicate but intensely floral and fruity with hints of jasmine and broom.
Palate: an initial crisp impact, reminisces of white fruit with hints of pear and pineapple.
Serving Temperature: 4°/6 ° C
Food Pairing: owing to its superb fragrance, it is excellent as an aperitif, with crudité, seafood, and cold cuts.
